Low-moisture mozzarella is what I prefer to use for these prosciutto-wrapped appetizers because it's firm enough to cut into cubes and soften in the pan with the prosciutto‚ providing salty edges for the mild-tasting cheese (which I like)․

I dry slices with paper towels before wrapping them‚ even mozzarella slices that look dry․ I use several paper towels to avoid moisture buildup and steaming in the pan‚ which keeps the prosciutto pale and the mozzarella from coming out of its wrapping․ Fully wrapping the slices keeps the cheese in place․
I use a nonstick pan․ I cook the wraps seam side down in batches for 2 to 3 minutes on each side over medium heat․ Make sure the oil in the pan is hot before adding the wraps․ Remove the wraps when the prosciutto is crispy and brown and the wraps are mostly softened․ Don't cook too many wraps at once‚ otherwise‚ steam will form in the pan and keep the wraps from crisping․
I include the mozzarella when preparing the appetizer in the wrap․ I transfer the appetizer to a platter and add balsamic reduction․ The appetizer can be eaten cold‚ but I like to serve warm appetizers with olives and bread (marinated artichoke hearts would be another good option) on the side․ Offer balsamic reduction for dipping in a small dish․
Why you'll love this recipe
- Thin slices of prosciutto are wrapped around the cheese․ The prosciutto browns in a few minutes․
- Low-moisture mozzarella melts easily in a wrap-filled pan without added liquid․
- Four ounces of prosciutto will go a long way if sliced into strips․
- A balsamic reduction is drizzled over salted wraps on a serving platter․
- Basil is optional but recommended․ Adding a small basil leaf to the bottle adds an aromatic note․
- Cherry mozzarella is a smaller mozzarella cheese product that doesn't require cutting fresh mozzarella․
Ingredients
- •4 oz prosciutto (thinly sliced)
- •8 oz low-moisture mozzarella cheese (cut into 1/2-inch cubes or use ciliegine mozzarella balls)
- •1 tbsp olive oil
- •¼ cup fresh basil leaves (optional)
- •2 tbsp balsamic glaze (for serving)
Instructions
- 1
Cut the mozzarella into 1/2-inch to 3/4-inch cubes, or use drained mozzarella balls. Pat the mozzarella completely dry with paper towels.
- 2
Cut the prosciutto slices in half lengthwise. Put a small basil leaf on each piece of mozzarella, if using, then tightly wrap it with a prosciutto strip until fully covered.
- 3
Heat the olive oil in a non-stick skillet over medium heat. Place the wrapped mozzarella seam-side down and cook for 2-3 minutes per side, until the prosciutto is crisp and the cheese is soft.
- 4
Alternatively, heat the oven to 400°F (200°C). Put the bites on a parchment-lined baking sheet and bake for 8-10 minutes, until the prosciutto is crisp.
- 5
Transfer the bites to a serving platter, drizzle with balsamic glaze, and serve immediately.
