Browning the beef before the Worcestershire goes in gives these cheeseburger quesadillas the browned meat flavor you want, and cheddar melts between golden tortillas while pickles stay tucked into the filling. I make them when burgers sound good but I want something from a skillet, honestly.
I spread the burger sauce on the inner face of the top tortilla and leave its sprayed side facing out, then the sauce stays inside when the quesadilla hits the pan. I don't want burger sauce on the outside of the tortilla. There's cheese against both tortillas. The beef and pickles sit in the middle, and that layout holds together well once the cheese has melted.
Use medium heat for the quesadillas after you clean out the skillet, and give both sides enough time to cook evenly once they're in the pan. Pulling one out early leaves a center that's still loose at the cut, especially near the middle where the filling is thickest. I wait until the cheese has melted all the way through before lifting it out.
After each round comes out, I set it aside before cutting and keep cooking the remaining quesadillas one at a time in the same skillet, with all the assembly already done before the first one cooks. Slice after 1-2 minutes, and put the dip on the table while you finish the batch.
Why you'll love this recipe
- The beef cooks before assembly, and it's ready to portion into each tortilla.
- Cheese goes below and above the beef, holding the filling between the tortillas as it melts.
- I let the cooked quesadillas sit for 1-2 minutes before slicing, and the cut pieces stay together better.
- A large spatula supports the full quesadilla during transfer from the cutting board to the skillet.
- Each side cooks for about 3 minutes, and the tortillas turn golden while the cheese melts through the filling.
- Cleaning the skillet after the beef gives the quesadillas a clean pan for their own cooking step.

- •½ cup ketchup (alternative to burger sauce, mixed with mayonnaise)
- •cooking spray
Instructions
- 1
Heat the vegetable oil in a skillet over medium-high heat.

- 3
Season the beef with salt.
- 4
Cook until the meat starts to brown, about 6-8 minutes.
- 5
Stir in the Worcestershire sauce.
- 6
Transfer the cooked beef to a bowl and set it aside.
- 7
Spray one side of a tortilla with cooking spray and place it sprayed-side down on a cutting board, or assemble it directly in the skillet if you can move fast enough.
- 8
Sprinkle about 1/3 cup of cheese over the dry side of the tortilla, then add about 1/3 cup of the beef and another 1/4-1/3 cup of cheese.
- 9
Arrange your desired amount of pickles over the cheese.
- 10
Spread a thin layer of burger sauce, or the mayo and ketchup mixture, on one side of another tortilla.
- 11
Spray the other side of that tortilla with cooking spray and place it on top of the filling, sprayed-side up.
- 12
Clean the skillet and return it to the stove over medium heat.
- 13
Use a large spatula to carefully transfer one quesadilla to the skillet.
- 14
Cook for about 3 minutes, or until golden, on the first side.
- 15
Gently flip the quesadilla and cook for about 3 minutes on the other side, until golden and the cheese has melted through.
- 16
Remove the cooked quesadilla and repeat with the remaining quesadillas.
- 17
Let the quesadillas sit for 1-2 minutes before slicing.
- 18
Serve with extra burger sauce, or the mayo and ketchup mixture, and mustard for dipping.
