Purchase a block of sharp, uniformly colored cheddar cheese and grate it yourself to make this cheeseburger macaroni soup. Melt the cheddar cheese to make a yellow-orange broth with cooked lean ground beef and macaroni noodles. Garnish the soup with diced raw onion and parsley and reserve some grated cheese for garnishing individual servings.

I use a large, heavy Dutch oven for this recipe. Brown lean beef and half of the onions until soft, then skim off some fat before adding butter and flour. The browned bits won't cook more when added to broth and milk and will be incorporated into the soup.
Reduce boiling seasoning mixture and add elbows; reduce heat to medium-low and cover. I cook elbow macaroni until the seasoning mixture looks glossy and the elbows are tender and curved. If you like firmer elbow macaroni, take it out sooner, as it will get softer during cooking in the seasoning mixture. Overcooking macaroni causes it to break apart.
I take the Dutch oven off the heat to add shredded cheese. Mix the shredded cheese into the broth until it melts. The Dutch oven will be hot enough to melt the cheese but not hot enough to boil it. Serve the soup hot in ceramic bowls with the reserved toppings. Other toppings can be added. Raw sliced onions offer a cool topping for hot soup.
Reasons to make this
- Sharp cheddar cheese enhances the soup's flavor and is used as a garnish in each serving bowl.
- Lean ground beef will brown and crumble but not leave an oily layer behind.
- White onion is cooked in the chili; the rest is scattered over each serving of chili.
- Whole milk and beef broth are used to create the cheddar flavor. Other ingredients are not necessary.
- Elbow macaroni can be cooked in the pot and will absorb some of the seasoned liquid from cooking.
- Fresh parsley adds color along with the cheddar and beef.
Ingredients
- •1 lb lean ground beef (450 g)
- •1 cup white onions (150 g, finely diced, divided)
- •2 tbsp unsalted butter (30 g)
- •2 tbsp all-purpose flour (16 g)
- •3 cups beef broth (710 ml)
- •2 cups whole milk (475 ml)
- •1 ½ cups dry elbow macaroni (170 g)
- •3 cups sharp cheddar cheese (340 g, shredded from a block, divided)
- •1 tsp salt (5 g)
- •½ tsp black pepper (1 g)
- •1 tsp garlic powder (3 g)
- •1 tbsp Worcestershire sauce (15 ml)
- •2 tbsp fresh parsley flakes (8 g, chopped)
Instructions
- 1
Heat a large Dutch oven over medium-high heat. Add 1 lb (450 g) lean ground beef and 1/2 cup (75 g) of the finely diced white onions. Cook for 5-7 minutes, breaking up the beef, until it has a deep golden-brown crust and the onion is fragrant and translucent. Drain any excess grease.
- 2
Reduce the heat to medium. Stir in 2 tbsp (30 g) unsalted butter until melted, then stir in 2 tbsp (16 g) all-purpose flour for 1 minute. Slowly add 3 cups (710 ml) beef broth and 2 cups (475 ml) whole milk, scraping the bottom of the pot.
- 3
Add 1 tsp (5 g) salt, 1/2 tsp (1 g) black pepper, 1 tsp (3 g) garlic powder, and 1 tbsp (15 ml) Worcestershire sauce. Bring to a gentle, rolling boil. Stir in 1.5 cups (170 g) dry elbow macaroni, reduce the heat to medium-low, cover, and simmer for 8-10 minutes, stirring occasionally, until the noodles are tender and curved and the broth is glossy.
- 4
Remove the pot entirely from the heat. Gradually stir in 2 cups (225 g) freshly shredded sharp cheddar cheese until it melts into the soup.
- 5
Ladle the soup into rustic ceramic bowls. Top with the remaining shredded sharp cheddar, reserved diced white onions, and 2 tbsp (8 g) fresh chopped parsley flakes. Serve immediately.
